There are always those days where you were busy toodling away at the potting bench, cleaning tools, watering the seedlings, and repainting the lawn furniture… and then you realize you have no, zero, nada plans for dinner. These are great recipes when you are too busy too cook. They throw together quickly, are inexpensive, and tasty. Tried and true.
Hamburger Stroganoff
- 2 lb. lean ground beef
- 1 medium onion
- 2 tsp minced garlic
- 1 can (10-3/4 oz.) cream of mushroom soup
- 1 C sliced mushrooms
- 1 C light sour cream
- Cooked egg noodles
Cook beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in soup. Simmer uncovered for about 10 minutes. Stir in sour cream and cook until mixture is hot. DO NOT BOIL after sour cream is added! Serve over cooked noodles.
Peach Dump Cake
- 24 oz jar of sliced peaches in light syrup
- 1 package yellow cake mix
- 1 stick butter (1/2 cup), cut into small pats
- 1 cup brown sugar
- 1/2 cup chopped walnuts
Preheat oven to 350 degrees F.
Dump ingredients in a 13 X 9 dish.
Layer in order starting with the peaches at the bottom.
Bake for about 40 minutes.
Serve warm or cold… with or without ice cream
